MATAR ALOO FRY

Matar Aloo Fry is one of the most liked curry and vegetables of many of us.Peas or matar always goes well with potatoes in any form.It is the most cooked vegetable of my family.It is very easy and quick to cook.I like it little Spicey with more peas than potatoes 😀.You can cook it with raw or boiled potatoes and peas.Here I used boiled potatoes and frozen peas to cook it.
                   
INGREDIENTS
Boiled Potatoes -1/2 kg
Frozen peas-250 gm
Haldi-1 tsp
Coriander powder -3tsp
Red chilli powder -1 and1/2 tsp
Amchur powder -2 tsp
Garam masala -1/4 tsp
Chopped green chillies and ginger -2 tsp
Jeera -1 tsp
Hing a pinch
Oil to fry-3 tbsp
Salt according to taste
Chopped coriander leaves
METHOD
First peel the boiled potatoes and break them in small peices with the help of your fingers. You can also cut them with knife. Put the frozen peas in water for some time to make them soft.Drain the peas.Heat oil in the pan.Add jeera and hing.when jeera becomes brown add peas.cook for 2-3 minutes.If you are not using frozen peas then also don't boil them to retain their green colour.Cook them in oil to be soft for 4-5 minutes. Now add green chilli and ginger. Add potatoes, salt and all the spices and mix well. Cook for again 3-4 minutes to roast it well on medium flame to give it a nice colour and aroma.Decorate with chopped coriander leaves.Aloo Matar Fry is ready to serve with puris or phulkas.
