VEGETABLE UPMA

Vegetable Upma is a traditional South-indian dish.it is nutrious,tasty and easy to make breakfast. It  look like a salty porridge. It is very light and healthy. It is made up of rava or suji. We have to dry roast the suji first. It takes 3-4 minutes to roast it on medium flame without changing its colour.
             
INGREDIENTS
Suji or rave(Roasted) -1 cup
Water -3 cup
Mix vegetables (chopped) -1 cup (Carrot, French beans, peas,capsicum, tomatoes)
Rai dana - 1 tsp
Curd-1/4 cup
Split urad and chana dal -1 tsp
Roasted penuts-8-10
Chopped green chillies and ginger -1tsp
Red chilli powder -1/2 tsp
Ghee or oil- tbsp
Curry leaves -2-3
Lemon juice -1/2 tsp
Salt to taste

METHOD
Heat oil in a pan.Add rai dana.when it starts to pop up add split urad and chana dal. When they turn little brown,add chopped vegetables, chillies,ginger and curry leaves and sauté for 3-4 minutes. Now add suji and mix well. Add water,curd, salt and red chilli powder. Mix it well and cook for 3-4 minutes.it with be thick like porridge. Add lemon juice. Mix well.Vegetable upma is ready to serve.
