DUM ALOO

Dum aloo is the most common gravy dish.It is made up of baby potatoes. Baby potatoes can be cooked of many types.But it's Dum aloo is above of all.You can get it in any restaurant of India.
                     
INGREDIENTS
Baby potatoes -500 gm
Tomatoes -5
Green chillies -3
Ginger(Grated) -1tsp
Kasuri methi -2tsp
Curd-1/2 cup
Butter -1/2 tbsp
Fresh cream(malai)-1/2 cup
If you don't have malai you can use 1/2 cup milk
Jeera-1tsp
Hing-a pinch
Haldi -1 tsp
Coriander powder -2tsp
Red chilli powder -1tsp
Garam masala 1/4 tsp
Black cardamom-1(seeds coarsely grinded)
Bay leaf-1
Ghee-1tbsp
Salt and black salt according to taste
Oil for deep frying (0ptional)
Coriander leaves to decorate

METHOD

Here I did not deep fry the baby potatoes After peeing and pricked  them with a fork, I boiled them in pressure cooker for two whistles.If you want to deep fry them,after peeling and pricking,deep fry them in oil on medium flame to be golden.
Grind the tomatoes, green chillies and ginger in a grinder.
Heat the ghee in a pan.add jeera,black cardamom,bay leaf and hing.Add grinded tomatoes and cook for 2 minutes.now add all the spices and butter.cook it until it separates the fat. Now add whisked curd stiring well.add milk or malai and stir continuously for 2 minutes.Add boiled or fried baby potatoes in it.add little water or milk to set the consistency. Add salt,black salt and kasuri methi and cook it for 5 minutes. Switch off the flame.Decorate with coriander leaves. Dum Aloo is ready to serve.
