Tomato Rice is a easy one pot meal. You can have it in lunch, dinner and also can Give it in your kid's lunch box. It can be cooked in pressure cooker or in a pan.It can also be easily cooked by steamed rice sautéd in tomato puree.I cooked it in the pressure cooker.
INGREDIENTS
Rice -2 cup
Water-4 cup
Rai dana-2tsp
Urad dal-1tsp
Chana dal -1 tsp
Curry leaves-8-10
Potato(chopped) -2
Carrot (chopped) -1
Peas-1/4 cup
Corn kernals -1/4 cup
Capsicum -1/4 cup
Beans-1/4 cup
Green chilli-2
Ginger -1/2 tsp
Tomatoes (puree)-4 tomatoes
Haldi-1 tsp
Red chilli powder -1/2 tsp
Coriander powder -2tsp
Garam masala -1/4 tsp
Ghee-3 tbsp
Salt according to taste
METHOD
First grind the tomatoes, chillies and ginger to make puree.wash the rice well.Heat the ghee in the pan. Add rai dana and hing. Add urad and chana dal and saute them till golden. Add curry leave, tomato puree and rice and saute them for 2 minutes.now mix tomato puree and cook again for 2-3 minutes.add all the vegetables, spices, salt,and water and mix well. Cook it in pressure cooker for one whistle. Switch off the gas.Allow all the steam to escape.open the pressure cooker and serve hot.
