CRISPY BEDMI


This is all time favorite breakfast of Mathura.you can see many stalls selling yummy 😋 Bedmi and Jalebi in Mathura .you can see the morning madness of Mathura's people for this food on these stalls.
Bedmi Recipe
Ingredient :
For dough
Maida-1/2 kg
Suji-250 gm
Soda bicarbonate -1/4tsp
Oil for kneading -100ml
Water for kneading
For filling
Urad dhuli(soaked at least for 4 hours)-100gm
Red chilli powder -2tsp
Coriander powder -4tsp
sounf(coarsely grinded) -2tsp
Sounth powder -1/2 tsp
Garam masala -1tsp
Hing-according to taste
Oil-2tbsp
Method
Mix all the ingredients of dough very well and knead a smooth dough with the help of water.rest it for 15 minutes.
Grind the dal coarsely. Add oil in the pan.now add dal and all the ingredients of filling. Roast and mix them very well on a medium flame. Let it cool down.
Make small balls of dough and roll it a little. Now fill the small portion of filling in it.and roll it again little thinner than puri.Now heat the oil for deep frying in a pan on medium flame and deep fry rolled Bedmi on low flame till it become little golden and crispy. Hot bedmi are ready to serve with aloo curry and sweet and sour pumpkin.
