VEGETABLE POHA

Vegetable poha is perfect for breakfast and evening snacks.whenever we think about breakfast, first thing comes to our mind is poha.It is loved by everyone.Poha mixed with vegetables is one of the healthiest option from the list of all snacks.
                   
INGREDIENTS
Thick poha-3 cup
Potatoes (chopped) -1/2cup
Peas -1/4 cup
Carrot (chopped) -1/4 cup
French beans-(chopped) -1 Tbsp
Capsicum (chopped) -1 Tbsp
Tomato(chopped) -1/4 cup
Curry leaves -2-3
Lemon juice -2 tbsp
Green chilli and ginger(chopped) -1tsp
Roasted penuts -1Tbsp
Oil-3 tbsp
Rai dana -2 tsp
Haldi -1/2 tsp
Coriander powder -2tsp
Red chilli powder -1 tsp
Salt to taste

METHOD
Wash the poha well under running water and put it in the a rice colander to be drain.
Heat oil in a pan and add rai dana.When rai dana starts to pop up add potatoes and saute them on medium flame till they turn golden in colour.Now add curry leaves, peas,carrots, capsicum, chopped green chillies and ginger,French beans and saute them for 2-3 minuter.Add tomatoes and penuts and cook for another  1 minute. Add poha and all the spices,lemon juice and coriander leaves. Mix well. Vegetables poha is ready to serve. 😃
